Aji Escabeche Chili Seeds
Info: The Aji Escabeche Chili is the most widely used Capsicum baccatum chili in Peru, it can be found on sale in the markets there all year round. The plants are perennial and, under good care, can grow very large (up to 2 metres). The orange coloured fruits are approx. 10 - 14 cm long, 3 cm thick and relatively thick-walled. They have a medium level of spiciness and a fruity flavour which is slightly reminiscent of oranges. The chillies are suitable for making fruity sauces and salsas, as well as for drying.
Care: The germination temperature is between 22 und 28°C (8 - 22 day germination period), therefore the use of a greenhouse and a heating mat is recommended. The plants need fresh, well-fertilised, permeable soil, and do not tolerate waterlogging. They should be planted in a sunny, protected place with at least 6 hours of sunlight - preferably more. Put the plants outside approx. 2 to 3 weeks after the last frost.
You can find plenty of useful tips for successfully growing chili plants in our Chili Growing Guide and in the Chili Journal.
