Recipe for Caipirinha-Chili-Sauce
An absolutely tasty chilli sauce for all lovers of the Caipirinha cocktail. Fruity, aromatic and delicious, this chilli sauce is sure to delight any citrus fan.
Ingredients :
10 - 12 habaneros (alternative: 7 Pot Chilli, Scotch Bonnet or Trinidad Scorpion).
1 green pepper
250 ml water
3 organic limes
50 ml apple cider vinegar
2 heaped tablespoons brown sugar
1 bottle of cachaca / pitu / white rum
Preparation:
Wash the limes well, grate the zest from 2 limes, then halve and squeeze all the limes. Cut open the chillies and peppers, remove the core and seeds and chop roughly.
Put all the ingredients except the cachaça (rum) into a pot and bring to the boil.
Remove the pot from the cooker and purée with a magic wand. Return the pot to the cooker and continue to boil until the desired consistency is reached.
While still hot, pour into bottles, do not fill them completely, but fill the remaining space with cachaça (rum) according to taste preference. Screw the bottles tightly, shake thoroughly and put to one side to cool.
