Peach Chutney with Chilli
A delicious chutney is not only a perfect match with cheese, it is also an absolute highlight as a gift for the next garden party or for a gourmet friend. If you have made your own chutney once, you will never want to buy it again. That`s the reason we tell you how to make your own chutney:
Peach chutney with chilli
Ingredients for 6 glasses (250 ml)
1 kg peaches
200g onions
2-3 tsp Rocoto chilli powder
100 ml peach juice
200 ml white wine vinegar
250 g Brown sugar
1 thumb-sized piece of ginger
½ tsp cumin
½ tsp coriander
1 tsp curry
1 tsp vegetable stock
a little salt and pepper
Preparation:
Bring a pot of water to the boil on the cooker. Cut the peaches on the underside in a cross shape. Place the peaches in the boiling water and blanch for about 30 seconds.
Drain the peaches, rinse and peel them immediately and remove the fruit flesh from the stone. Then cut the fruit flesh into cubes of about 1 cm. Peel the ginger and chop finely with a chopping knife.
Peel and finely chop the onions and fry them in some fat in a large pot until they turn a light brown.
Then add the peach, ginger and chilli and bring to the boil. After about 5 minutes, pour in the vinegar, add all the spices and the sugar and simmer over a medium heat for about 30 - 40 minutes, seasoning a bit to taste or adding vinegar or water if too much liquid is lost.
Fill into sterilised jars while still hot and boil down again to extend the shelf life.
The peach chutney is excellent as a side dish with grilled food, as a substitute for the typical cranberries or a cheese dish.
